Recipe For Bee Pollen Mousse? – You Must Be Joking!

 

When I read on the Masterchef website that there was a recipe for bee pollen mousse that had been featured on the programme, I thought that it might have been a joke! It was not and then I went on a massive Internet hunt to find the recipe.

I could not find it on any of the Masterchef programs from USA, to New Zealand, Australia and the UK. In the end, I found one that was actually on a BBC program so here it is. This may not be the original Masterchef one.

What fascinated me about this bee pollen mousse is the fact that the ingredients were almost identical to those used as  a facial mask in skincare. The only difference is there is a large dollop of double cream and that you actually eat this one so think about that when you do your next facial mask using some of  these ingredients. You know what they say about putting  on your face only the things you would actually eat!

Lemon or Lime?

         

  • 1 ripe avocado                                                
  • 0.7 grams of bee pollen granules
  • 25g. double cream (1 oz)
  • one half of egg white
  • a pinch of salt
  • a squeeze of lemon or lime juice, whichever you have handy

According to the experts, you need a reconstituting machine which basically mixes and freezes foods and then after freezing, restores them back to their original creamy consistency. This restores frozen foods to their normal state in seconds. No defrosting or waiting to see if you have the right consistency for your mousses or sauces.

So, if you do not have one of these machines, you can churn the ingredients in an ice cream maker and freeze them. Some hours before serving transfer the container from the freezer to the fridge until the mix becomes the right consistency.

Normally, you never need to cook bee pollen as the above recipe illustrates. If you did happen to heat or boil it, it would lose a lot of its nutritional value. That is why the majority of recipes actually use the pollen as a healthy addition to the following:-
